Open source, local, and cheaper
The short answer
Flit and VoiceInk are the two serious local, one-time-purchase dictation apps for Mac, and Flit is the more capable of them: text appears as you speak, it indexes your open project so spoken code names come out right, it rewrites selected text by voice, and it dictates in 99 languages. VoiceInk is the budget option and an honest one, starting at $25 and open source, which is a real advantage if reading the code is how you decide.

In fairness
Listed because they are true. VoiceInk is local and open source, and published source settles the trust question on terms nobody has to take on faith. What is left is how much of the work happens before the text reaches your cursor.
Flit asks you to believe a privacy claim you can verify by watching the network, but not by reading the code. VoiceInk lets you read the code. For some people that settles it, and it should. Our answer is not that auditability does not matter; it is that PRIVACY.md documents every network-capable path, the app makes exactly two kinds of call, and a network monitor proves the rest in about a minute.
The gap is roughly the price of a lunch, and it buys four things: streaming text, the workspace index, voice editing of selected text, and translation. If you write code or write in more than one language, those are not extras, they are the reason to choose Flit. If you need none of them, VoiceInk does the basics well and costs less.

Choose VoiceInk if
auditable source or the lowest price matters most, and you do not need streaming or a codebase index.
Yes. Neither uploads your audio for normal dictation. VoiceInk offers an optional cloud text pass; Flit has no cloud path at all.
No. The privacy guarantees are documented in PRIVACY.md with a verification recipe, but the source is not published, and we would rather state that plainly than imply otherwise.
Flit, on the specific point of spoken identifiers: it indexes the project you have open and repairs mishearings against real symbol names anywhere you dictate. VoiceInk has a Cursor-specific mode.
