The short answer
Flit is what you move to when Apple Dictation stops being enough. The free one gives you roughly what you said; Flit gives you what you meant to write, with fillers removed, times and emails formatted by fixed rules, tone matched to the app you are in, snippets, a learning dictionary, and a local codebase index. For a text message now and then, the built-in one is fine and you should use it. For writing all day, the cleanup it leaves you is the cost.

In fairness
Listed because they are true. Apple Dictation is free and runs on your Mac for the languages Apple supports locally. The question is only whether formatting, a dictionary, snippets and a different style per app are worth $49 to you.
If you dictate a text message now and then, Apple Dictation is the right tool and buying anything would be a waste. The case for a paid app is entirely about volume and finish. When dictation becomes how you write rather than something you occasionally try, the cleanup you do by hand after every free dictation is the cost, and it is bigger than $49 within a week.
Say "um so can we uh meet at ten thirty am on on friday" to Apple Dictation and you get roughly that back. Flit writes "Can we meet at 10:30 AM on Friday?" The fillers go, the doubled word goes, the time is formatted by a fixed rule rather than a guess, and the tone matches the app you are in. That gap is the product.

Choose Apple Dictation if
you dictate occasionally and do not mind tidying the result.
On modern Macs it runs locally for supported languages, so it is a reasonable privacy choice. Flit runs on your Mac only, with no cloud path at all, and documents the guarantee with a verification recipe.
Only for volume and finish. If you dictate all day, formatted output, per-app tone, snippets, and a dictionary that learns save more time than the price. If you do not, the free one is correct.
Yes, they use different shortcuts and do not conflict.
